Welcome back to blogtober17, Sorry I've missed a couple I've been so busy and I did warn you!!Todays theme is Kitchen, Now I don't really spend too much time in my kitchen, in all honestly mike does more as he cooks and cleans the kitchen as he's such a babe! Anyway I only really ever do baking in my kitchen as I love to make cakes and treats with the kids, so this post is going to be about my fave cake recipe :) Hope you enjoy!


So you've often got those black mushy bananas about in your kitchen that the kids beg you to buy and then don't eat right? Well this is gonna make use of those! Chocolate Banana Bread!!! Its completely dairy* free and wont cost u a lot either :) *only if you use dairy free butter such as vitalite*



Chocolate Banana Bread:

  • 200g plain flour 
  • 200g caster sugar 
  • 50g butter, softened  *this is where I use vitalite to make it dairy free*
  • 1 teaspoon vanilla extract 
  • 1 teaspoon bicarbonate of soda 
  • 1/2 teaspoon baking powder 
  • 1 egg 
  • 3-4 very ripe bananas
  • Currants if you want to add them or Diary free chocolate buttons crushed SAVE SOME FOR TOPPING!
  • Betty Crocker chocolate fudge icing (YES ITS DAIRY FREE!!) FOR TOPPING!!
Mix all ingredients together make sure the bananas are well mashed or use an electric mixer.
Bang it in a loaf tin lined with baking paper and cook on 160-180c/gas mark 3/4 for around 40 minutes checking half way through.
Leave to cool for 30 mins or until cool then use the fudge icing on top and decorate!
Serve with a lovely cuppa and enjoy :)
